An easy, one pot dish to suit the whole family. You can swap the beef for chicken, turkey or pork. 
Ingredients 
 
1 tbsp olive oil 
1 onion, peeled and chopped 
1 clove of garlic, peeled and crushed (or diced as small as possible) 
2 carrots, peeled and cut into small cubes 
Alternative to carrots – 1 red pepper, chopped 
400g minced beef 
½ tsp chilli powder (adjust to taste) 
½ tsp ground cumin 
400g tin of chopped tomatoes 
400g tin of kidney beans 
Alternative to kidney beans – baked beans 
 
Method: 
 
Heat the oil in a large saucepan. 
Add the onion, garlic and carrots/peppers. 
Cook and stir until softened (about 5 minutes). 
Add the mince and heat, stirring, until browned. 
Add the tinned tomatoes, chilli powder and cumin. 
Bring to the boil, then reduce the heat and simmer for 30 minutes, stirring occasionally. 
Add the kidney beans/ baked beans, and simmer for an additional 15 minutes. 
Serve with rice, adding sour cream/grated cheese on top to taste.
