Macaroni Cheese
What child doesn’t love cheese? This meal is a great source of protein, energy and calcium for your little ones.
Ingredients
300g macaroni pasta
50g butter
50g flour
500ml full fat milk
250g grated cheddar
For the Topping:
Breadcrumbs
A handful grated cheddar
Optional: add some vegetables – broccoli, carrots, or sweetcorn – just put them in with the pasta for the last few minutes of cooking.
Optional – add bacon (for older children, as it has too much salt for little ones) or ham, chopping into pieces.
Method:
Heat the oven to 180°C (160°C for fan-assisted oven). Alternatively, you can pop it under the grill.
Cook the macaroni as per packet instructions. If you are adding vegetables, add them to the water for the last few minutes. Drain and return to the saucepan.
In a saucepan, melt the butter, then turn the heat down low. Add the flour and cook for 1 minute, stirring continuously. Once the flour and butter are mixed to a paste, add the milk gradually – a ladleful at a time, stirring until it is absorbed, then adding the next. Once all the milk is incorporated, turn off the heat.
Add the grated cheese and stir to mix. Once it is melted, pour the sauce over the pasta (and vegetables). Turn the hob back on and heat gently, stirring. If you are using bacon or ham, add it now.
Transfer to an oven dish (or individual dishes, if you have them). Sprinkle over the breadcrumbs and the grated cheese.
Either put in the oven for 10-15 minutes (until golden and bubbling) or place under the grill for 5-10 minutes.
